Brinjal masala gravy

A easy dish that you will make in 15 minutes. It is one of the popular South Indian chettinad cuisine. Because it is very easy to cook and it goes great with curd rice, rasam, and plain rice. Hope you'll try this once and let me know how it works.

Preparation time:10 minutes 
Cooking time: 15 minutes 
Serves: 2 to 3

Ingredients :

  1. Brinjal- 1/4 kg
  2. Pearl onions/shallots- 10 to 12
  3. Tomatoes- 2
  4. Cinnamon - 1 piece
  5. Fennel seeds - 1 tsp 
  6. Masala red chili powder - 2 tsp
  7. Turmeric powder- 1 tsp
  8. Curry leaves- few
  9. Salt- as required 
Methods:
 Step 1: Take a pan, heat 3 tsp of oil, add cinnamon, Fennel seeds, curry leaves, finely chopped shallots and saute them well till it turns light brown in color. 

Step 2: Now add chopped tomatoes and cook till the tomatoes turns mushy. Add required salt. 

Step 3: Add chopped brinjal, saute them well and add turmeric powder, masala red chili powder. Mix them well with 1 cup of water. 

Step 4: close the pan with lid and cook in a slow flame for 10 minutes without burnt it. Now the gravy leaves oil in the sides of a pan. Switch off the stove and ready to serve hot.

Now add tomatoes and cook till it turns mushy. Add salt. 
Add brinjal, turmeric powder, masala red chili powder and mix well. 
Add some water and cook for 10 minutes in a low flame. 
Now the brinjal masala gravy is ready to serve.
